“I am not into sweets”
I’ve heard it countless times…

Let’s face it and accept it all people: we humans have a sweet tooth, no exceptions, and that’s including you gentlemen! I am not saying everyone is keen to get in the kitchen and bake, no no no, I am just saying that when a plate of sweetness is left on a table, chances are it will be reported missing sooner or later. For me, that’s the definition of having an affinity with sweet treats, don’t you agree? By popular demand, after posting the below picture on the Beyoutiful Yoga Facebook Page, I couldn’t find peace leaving everyone mouth watering in front of their screen, without sharing the recipe of these delicious biscuits – in English that is. This is an excellent and very easy one from “Clea Cuisine“, a French cooking website that I love to explore. I made these a few weeks ago for the Yoga Australia Victorian Members Gathering as it is tradition that we all bring a plate to share. Of course, I made enough to keep some at home! :-)

Type of dish: Snack.
Serves: About 20 biscuits
Difficulty: Ridiculously Easy
Cost: Low
Prep time: 5 min + 1 hr in the fridge
Cooking time: 8 to 10 min

Ingredients:
80g softened unsalted butter
25g sugar (Rapadura)
45g honey of your choice
1 egg
Zest of 1 lemon or orange (optional but highly recommended)
100g fine polenta
150g flour
15g almond meal
Prefer organic ingredients: better for you, better for the environment!

Preparation:
Crush the softened butter, sugar and honey with a fork. Incorporate the egg, zest, then the polenta, flour and almond meal.
Make a sausage like shape and rest in the fridge for at least 1 hour.
Preheat the oven to 200°C.
Slice the sausage into 1cm wide slices.
Cover an oven tray with baking paper and lay the slices on the baking paper.
Bake for about 8min and let them cool down before eating. I know… discipline, discipline!

Note that it is important to bake the biscuits straight after taking them out of the fridge so they keep their pretty ‘moon shape’!
