If you think you know Indian cuisine, go to India and think again. Unfortunately and surprisingly, I took almost no photos of the amazing dishes that I got to taste, I must have been too busy devouring them!!! Indian meals are delicious and so satisfying. The variety of dishes and flavours is amazing and watching the preparation of a home-made meal is captivating. Three main meals a day is the norm and they are all quite substantial. They usually comprise several curried vegetable (and sometime meat or fish) dishes and dhal, accompanied by rice and/or chapatis, served all at once. Fresh fruits or ‘payasam’ (creamy rice pudding) often wrap up a meal. You’ll be served an afternoon tea (chai + a sweet treat) when staying in a home-stay. India is a culinary carnival and I miss it! But I’ve already attempted some experiments in the kitchen and I’ll be sharing soon.

TIP #3: Make the best of Indian food while in India. Unless you are prepared to entirely re-equip your kitchen and don’t mind LOADS of dishes!
